A Great Meal and A Recipe for Success

Here's the photographic evidence of a fantastic meal on Santorini.
A Santorini Salad with complete with local chloro cheese and Santorini capers
Fava in Greek, or pureed yellow split-peas with onions and olive oil
Some fantastic fresh fish. Fried whitebait, marithes, and grilled tsipoura, which I don't believe has an English translation other than "delicious"

Although it was definitely the simplest, the fresh, summery taste of Santorini Salad was my favorite staple at all our meals. Here's the recipe, which is really just a list of fresh, delicious ingredients to combine.

First, make the dressing: Combine equal parts good quality olive oil and vinegar. Add a bit of minced garlic, parsley, oregano, salt and pepper.

Then, mix together in a bowl: sliced cucumber, halved cherry tomatoes, sliced onion and sliced green pepper, croutons and capers.

Dress lightly and, if you want, finish with fresh lemon juice. 

Greek salads in Greece never feature lettuce, but if you want, you can throw some in as well. For a truly authentic taste, try to get Santorini capers, which are larger and sweeter than the capers I've tried before.
